Tuna Pinwheels

One of the most requested dishes in my house. Deb.
BISCUIT DOUGH
1 c. flour
2 tsp. baking powder
1/2 tsp. salt
2 tsp. sugar
2 tbsp. fat/butter
1/2 c. milk

FILLING
1 can tuna, flaked
2 tbsp. finely chopped onion
2 tbsp. grated cheddar cheese
1 tbsp. chopped parsley
1/4 tsp. celery salt
salt & pepper

SAUCE
1 tbsp. flour
1/2 tsp. salt
1 tbsp. butter
1 c. milk
1/4 to 1/2 c. grated cheddar


BISCUIT DOUGH

Mix flour, baking powder & salt in bowl; cut in fat till size of small peas; mix in milk with a fork; knead 10 times; roll out to 8" x 12" rectangle.

FILLING

Mix all & spread over dough, roll up so you have a 12" long roll, cut into 9 to 12 pieces & place in a greased pan. Bake at 425F for 15 to 20 min.

SAUCE

Melt butter; add salt & flour; slowly stir in milk, heat to glossy on med. low heat. Add cheese, stir to melt.  

Indepth description from Deb:

Heat oven to 425º and grease cookie sheet. In a small bowl stir to combine all ingredients for filling. Set aside. Now mix flour, baking powder, salt & sugar from dough ingredients in a medium sized bowl. Cut in butter till pieces are size of small peas. Make a well in the centre of the mixture and pour milk in all at once. Stir with a fork just till barely moistened (don’t overdo it). Place a little flour on the counter then pour mixture onto it. Work only till you can form it into a ball. Roll the dough into a rectangle approximately 8” x 12”. Spread filling over dough. Roll up using the long side of the dough. Using dental floss or a sharp knife cut into 1.5” thick rolls and place cut side down on a greased baking sheet. Bake for approximately 15 minutes or until lightly browned. While rolls are baking make a cheese sauce by melting 1 tablespoon of butter in a small saucepan. Add 1 tablespoon of flour and cook over medium heat for a minute or so to cook the flour. Add 1 cup of milk and stir till sauce thickens. Add 3/4 cup grated cheddar cheese and stir till cheese melts. Spoon sauce over rolls and enjoy. This recipe is from home ec. class in grade 8. Everybody especially kids love them and are one of the most requested dishes in my house.
