STEP 1
2 Tbsp butter
2 Tbsp flour
1/2 tsp salt
1 ¼ cup milk (or cereal cream – 10%)
1/3 cup grated gruyere cheese (or swiss cheese)
¼ cup grated parmesan cheese

STEP 2
2 cups sliced mushrooms
2 green onions – chopped (optional)
3 tbsp. butter

STEP 3
1 ½ lbs. scallops, shrimp or whatever shellfish you like
1 cup dry white wine
½ tsp. salt

STEP 1

Melt the butter in a small saucepan over medium heat. When it starts to bubble, add flour and salt and mix to a smooth paste. Stirring constantly, slowly add milk keeping your smoothness and continue to stir until thickened & glossy. Stir in gruyere & parmesan, stirring constantly till just melted & remove from heat. Set aside.          

STEP 2

In a medium size frying pan melt butter & cook mushrooms and green onions until tender. Stir into the above cream sauce.  

STEP 3                                 

Add wine to frying fan, heat to boil, simmer till reduced by about ½. Add seafood, cook on medium heat till done – about 6 minutes, add the reserved cream/mushroom sauce to the seafood/wine & heat through. Serve over rice or pasta.
