Fudgesicles

¼ cup semi-sweet chocolate chips
⅔ cups granulated sugar or coconut sugar
2 TB cornstarch
3 TB cocoa powder
2 ½ cups whole milk
1 tsp pure vanilla extract
1 TB butter

Instructions:
Combine all dry ingredients in small bowl, mix thoroughly and set aside.

In a medium saucepan on low heat, add chocolate chips & melt. Slowly add the milk & dry ingredients, stirring well to combine. Cook over medium heat, stirring often and as it begins to thicken, stir almost constantly, takes about 10 minutes total. Remove from heat. Add vanilla extract and butter, stirring to incorporate.
Let mixture cool just until it is warm (not hot) stirring occasionally. Pour into 6 large popsicle molds (or 8 smaller molds.)
Freeze and serve.

Notes

Some additions I make: 1/4 tsp konjac/glucomannan powder, 1/2 tsp sunflower lethicin.
