Enchiladas

A huge favourite at out house

1/8 cup olive oil
4 cloves garlic, minced, or as much as you can stand
1 10 oz can tomato sauce
1 10 oz can water
2 good Tbsp. chili powder
1 tsp. cumin
2 tsp. salt
2 large onions, diced
1 lb monterey jack cheese
1 lb lean ground beef or chicken
18 flour tortillas

Sauce: Saute minced garlic in olive oil till clear not brown. Add tomato sauce, water, chili powder, cumin and salt.  Simmer 10 minutes.

Filling: Brown the ground beef, add onions cook until onions are transparent, Add 3/4 lb grated cheese remove from heat and allow cheese to melt through the filling mixture.

Tortillas:  Fry tortillas one at a time in an oiled frying pan at high temperature, tuning once. Spread with a small amount of sauce. Place 1 heaping Tbsp of filling on each tortilla. Roll up like a crepe and lay in a rectangular oven dish. Add remaining sauce. Sprinkle remaining filling and remaining 1/4 lb cheese over the rolled tortillas.

Bake at 350 F for 30 minutes, serves 8
