An old Mennonite dish
1/2 c. pearl tapioca
5 c. water
2 c. raisins
1 c. sugar
1 cinnamon stick
lemon rind
1/4 c. lemon juice
Soak tapioca overnight in 5 cups water. Add remaining ingredients & cook on low till tapioca turns clear, up to 1 hour.
